Bring a salted pan of water to the boil. Bring another saucepan of water to the boil. Add the stock and stir to dissolve. When dissolved set aside.

Finely dice the brown onion, celery, carrot, garlic and green capsicum.

Heat the olive oil over medium high heat.

Add the onion, garlic, celery, carrot and green capsicum to the pan and fry until the veg is beginning to soften.

Roughly chop the fresh coriander.

Add the beef mince to the pan and season with salt and pepper.

Continue to cook until fully browned.

Add the rice to the boiling water and cook for around 11 mins.

Add the chopped tomatoes, stock and tomato paste to the mince and stir through.

Add the chilli spices, dark chocolate and brown sugar to the pan and stir through the chilli.

Reduce the heat and allow to simmer.

Add the kidney beans and half of the fresh coriander to the chilli stirring occasionally as it simmers.

Now the rice is tender, drain the rice.

Distribute the rice amongst serving plates.

Beef Stock , combine each stock cube with 450-500ml of boiling water. Stir until dissolved.
