    Bring a saucepan of water to the boil.

  • 0.5 min

    Finely chop the garlic.

  • 1.0 min

    Finely slice the red chillies.

  • 1.5 min

    Halve and juice the orange and limes.

  • 2.5 min

    Peel and chop the brown onion and thickly slice the banana across a diagonal.

    In a bowl, add together the cumin, half of the garlic, red chilli, orange, lime, honey and soy sauce. Mix well.

    Add the chicken to the marinade.

    Add the rice to the boiling water.

    Heat half the olive oil in a pan over medium heat.

    Fry the bananas in the olive oil and sprinkle with salt and pepper. Do NOT allow the bananas to burn.

    Remove the bananas and add the chicken to the pan until cooked through, turning occasionally (10mins).

    Heat the remaining olive oil over medium heat in a frying pan.

    Add the onion and remaining garlic to the pan and cook until softened.

    Add the black beans to the onion and cook until warmed through.

    Add the rice to the onion and black bean mixture. Stir through.

    Distribute the rice and fried bananas among serving bowls.

    When the chicken is cooked through remove from the pan and serve alongside the rice.
