Aubergine Moussaka Rolls with Rocket Salad

This twist on the classic moussaka combines eggplant 2-ways with a delicious ricotta filling, baked with tomato sauce and cheese.

    Preheat the oven to 180C.

    Cut half of the aubergine into slices (5mm thick).

    Halve and juice the lemons.

  • 3.0 min

    Peel and finely chop the onion and garlic.

    Finely chop the parsley and oregano.

    Finely grate the parmesan.

    Season the aubergine slices with salt and pepper.

    Heat a frying pan with half of the oil over high heat.

    Cook the aubergine slices, in batches if needed, until golden (a few minutes each side).

    Transfer to a baking tray and drizzle with lemon juice.

    Reserve 2-3 slices per person and chop the remaining.

    Combine the ricotta, chopped aubergine, onion, garlic, parsley, oregano and nutmeg in a bowl.

    Season the mixture with salt and pepper to taste.

    Place one of the aubergine slices on a flat surface and top one side with ricotta mixture.

    Roll up firmly to enclose the filling and place seam-side down, in a baking dish.

    Pour the tomato passata over the eggplant rolls.
