Step 1
In a bowl, mix together a quarter of the coconut milk and the curry paste.

Chop the red onion and green capsicum, and cut the chicken breast into small chunks. Marinate the chicken in the curry-coconut mixture.

While the chicken is marinating, prepare your cauliflower rice: finely chop or grate the cauliflower until it has a rice-like consistency, or alternatively pulse it in a blender.

Next, thread the marinated chicken, capsicum and onion onto skewers.

In a frying pan, add half the olive oil and the cauliflower rice. Cook until the cauliflower is slightly golden in color and has softened.

In a large frying pan, add the remaining olive oil over high heat, then add the skewers and cook until well done.

While the skewers are cooking, gradually stir the remaining coconut milk, curry powder, and spinach into the cauliflower rice. Season the mixture well with salt and pepper.

To serve, distribute the cauliflower rice and chicken skewers among your plates. Enjoy your meal!
