Mexican Chicken Fajitas

The marinated chicken in these fajitas are mouthwatering. Seared quickly and served with crisp onions and bell peppers atop warm flour tortillas, they are sure to be a favourite.

    Preheat the oven to 120C.

    Halve and juice the lime(s).

    Grate the cheese and set aside in the fridge.

    Peel and slice the red onion.

    Julienne the capsicum.

    Slice the chicken breast into strips.

    In a large mixing bowl, add the chicken, capsicum and red onion. Season lightly with salt and pepper.
